Microgreens add a fresh, nutrient-packed boost to salads! Here are a few delicious salad recipes featuring microgreens:

1. Citrus Avocado Microgreen Salad

Ingredients:

  • 2 cups mixed microgreens (sunflower, radish, or pea shoots)
  • 1 orange, peeled and segmented
  • 1 avocado, sliced
  • ¼ red onion, thinly sliced
  • ¼ cup toasted almonds or walnuts
  • 2 tbsp feta cheese (optional)
  • Dressing: 2 tbsp olive oil, 1 tbsp lemon juice, 1 tsp honey, salt & pepper

Instructions:

  1. Toss microgreens with orange segments, avocado, and red onion.
  2. Drizzle with the dressing and gently mix.
  3. Top with nuts and feta. Serve immediately.

2. Microgreens & Quinoa Power Salad

Ingredients:

  • 1 cup cooked quinoa
  • 2 cups microgreens (broccoli, kale, or mustard)
  • ½ cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ cup crumbled goat cheese
  • 2 tbsp pumpkin seeds
  • Dressing: 3 tbsp olive oil, 1 tbsp balsamic vinegar, 1 tsp Dijon mustard, salt & pepper

Instructions:

  1. Mix quinoa, microgreens, cucumber, and tomatoes in a bowl.
  2. Drizzle with the dressing and toss gently.
  3. Sprinkle goat cheese and pumpkin seeds on top.

3. Spicy Radish Microgreen Slaw

Ingredients:

  • 2 cups shredded cabbage (red or green)
  • 1 cup radish microgreens
  • 1 carrot, julienned
  • 2 tbsp chopped cilantro
  • 2 tbsp sesame seeds
  • Dressing: 2 tbsp rice vinegar, 1 tbsp sesame oil, 1 tsp honey, ½ tsp chili flakes

Instructions:

  1. Combine all vegetables and microgreens in a bowl.
  2. Whisk dressing ingredients and pour over the slaw.
  3. Toss to combine and sprinkle with sesame seeds before serving.

4. Caprese Microgreen Salad

Ingredients:

  • 1 cup microgreens (basil, arugula, or sunflower)
  • 1 cup cherry tomatoes, halved
  • ½ cup fresh mozzarella balls
  • 2 tbsp pine nuts, toasted
  • Dressing: 2 tbsp balsamic glaze, 2 tbsp olive oil, salt & pepper

Instructions:

  1. Arrange tomatoes, mozzarella, and microgreens on a plate.
  2. Drizzle with olive oil and balsamic glaze.
  3. Top with toasted pine nuts and season with salt & pepper.
