1. Spicy Korean Bulgogi Beef Wraps with Microgreens

  • ¼ cup soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tsp ginger, grated
  • 2 garlic cloves, minced
  • 1 tsp gochujang (Korean chili paste)
  • 1 tbsp sesame seeds
  • 1 cup microgreens (radish or mustard)
  • 8 small lettuce leaves (for wrapping)
  • ½ cup kimchi

Instructions:

  1. Marinate beef with soy sauce, sesame oil, honey, ginger, garlic, and gochujang for 30 minutes.
  2. Stir-fry beef over medium-high heat until caramelized.

2. Microgreen Miso Soup

Ingredients:

  • 4 cups vegetable broth
  • 2 tbsp white miso paste
  • 1 cup tofu, cubed

  • ½ cup microgreens (broccoli or sunflower)
  • 2 green onions, chopped
  • 1 tbsp sesame seeds

Instructions:

Ingredients:

  • 1 baguette, sliced open
  • 4 oz grilled chicken or tofu
  • ¼ cup pickled carrots & daikon
  • 1 tbsp mayonnaise or sriracha mayo
  • ¼ cup cucumber slices
  • ¼ cup microgreens (cilantro or mustard)
  • 1 tbsp soy sauce

Instructions:

  1. Toast baguette and spread mayo inside.
  2. Layer grilled chicken or tofu, pickled veggies, cucumbers, and microgreens.
  3. Drizzle with soy sauce, close, and enjoy!

4. Microgreen Ramen Bowl

Ingredients:

  • 4 cups chicken or vegetable broth
  • 2 packs fresh ramen noodles
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp ginger, grated
  • 2 garlic cloves, minced
  • 1 soft-boiled egg, halved
  • ½ cup mushrooms, sliced
  • ¼ cup corn kernels

Instructions:
